SHRIMP TOAST(recipe
for 4 people)
12 medium sized (fresh or frozen) shrimp…peeled and uncooked…finely
chopped
½ loft sweet baguette bread…..1/4” thick sliced
2 large eggs
enough celentro and green onions chopped together to make ¼ cup
1 ½- 2 cups vegetable oil
½ tablespoon of fish sauce
¼ teaspoon of sugar
½ teaspoon of ground black pepper
1 teaspoon of sesame seeds (white)
Directions:
Heat oil.
While oil is heating, mix the shrimp, eggs, fish sauce, ground pepper,
sugar, sesame seeds, cilantro and green onions together in a bowl.
Then spread the mixture onto a piece of bread.
Place bread with the spread mixture face down into hot oil and cook until
golden brown. Turn the bread over and cook the other side until it is
golden brown as well. Drain oil

FOR THE CUCUMBER SALAD:
1/4 cup Sugar
1/2 tsp Salt
1/2 cup white vinegar
1 cup sliced cucumber
1/2 cup sliced red onion
1/4 cup sliced bell pepper
Dressing:
Melt sugar, salt and vinegar in a saucepan. Heat and stir. Let cool. Pour
over cucumbers, onions and bell peppers.
